Aunt Pat’s 7-Minute Frosting

Yield: ~3 cups

Aunt Pat’s 7-Minute Frosting


  • 1 cup sugar
  • ¹/8 teaspoon cream of tartar
  • pinch salt
  • 1 egg white
  • ¹/3 cup boiling water
  • ½ teaspoon vanilla


  • Add sugar, cream of tartar, salt, and egg white to a heatproof bowl. While mixing, add the boiling water, and continue to mix for a minute or so. Set the bowl over a pot of boiling water, and use a hand mixer to beat for 7 minutes.
  • Remove from heat, add vanilla, and mix through.
