Banana Muffins

Healthy(ish) Banana Breakfast Muffins

Yield: ~18 muffins


  • ¾ cup all-purpose flour
  • ¾ cup whole wheat flour
  • 1 cup oatmeal
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ¼ cup sugar
  • ¼ cup dark brown sugar
  • ¹/3 cup olive oil
  • ¹/3 cup apple sauce
  • 1 large egg
  • 1 teaspoon vanilla
  • 1 cup (approximately 2) mashed bananas – the older and browner, the better!
  • ²/3 cup milk
  • ½ cup crushed pecans


  • Preheat oven to 350F. Combine flours, oatmeal, baking powder and soda, and salt. Set aside.
  • In bowl of electric mixer, combine sugars, olive oil, and apple sauce. Mix on medium-low until well combined. Add egg, and continue mixing for several minutes. Add vanilla and mashed bananas and mix until combined.
  • Alternate adding the dry ingredients and milk to the wet ingredients. Mix only on low and until just combined. Fold in the pecans by hand.
  • Divide batter into lined muffin cups. Bake for ~17-20 minutes, or until toothpick comes out clean and tops are golden brown. Cool on a wire rack.
