Chocolate Cupcakes With Raspberry Filling

Chocolate and raspberries are two flavours that complement each other so well – one of my favourites! And these yummy cupcakes are really easy to put together. Here’s how I made them…

You’ll need:
• Chocolate Cupcakes (you can find my recipe here )
• Raspberry Jelly (I used store bought jelly – Shame on me! But raspberries are hard to come by this time of year)
• Chocolate Frosting

Here’s my chocolate frosting recipe:

INGREDIENTS
1/2 cup cocoa powder
1/2 cup boiling water
12 oz semi-sweet chocolate, melted and cooled
2 sticks (1 cup) butter, room temperature
~2 cups icing sugar

DIRECTIONS

Mix the cocoa powder and water together until smooth, and set aside to cool slightly.

Add the cocoa powder mixture, melted chocolate, and butter to the bowl of an electric mixer, and beat on medium speed until light and fluffy. Add the icing sugar, 1/2 cup at a time, until desired consistency is achieved.

To assemble to cupcakes, cut a cone shape out of the top of each cupcake.

Fill with a teaspoon (or so) of raspberry jelly and replace the top.

Pipe the chocolate frosting on top, and add sprinkles if desired!
