There’s something about the summer that makes a nice refreshing cocktail even more appealing. Hitch and I had dinner plans with my Mama a few nights ago, and considered heading out for cocktails beforehand, but then decided we could have just as good (or better) at home! Here’s the super simple recipe for the bellinis we made. They’re lovely and fresh, and not too sweet :)
           
            INGREDIENTS
           
           
           
            makes 3 cocktails
           
          
           2 peaches, plus more for garnish
           
           1 tablespoon sugar
           
           dash of cointreau
           
           bottle of champagne or sparkling wine, chilled
          
DIRECTIONS
Peel, pit, and chop the peaches. Place them into the blender, along with the sugar and cointreau, and blend until completely smooth.
           
          
           
          
           
          
Divide the puree between three glasses, and top up with bubbly.
           
          
           
          
           
          
Garnish with a peach slice, and enjoy!
