(Epic) Brie + Apple Grilled Cheese Sandwich

I need to start by saying that I LOVE grilled cheese sandwiches. I’m talking the plain ol’ store-bought-foggy-white-bread-with-kraft-cheese-slices variety (sorry foodies everywhere). I can’t help it, they’re my ultimate comfort food.

But lately I got to thinking about how I’m surrounded by arguably the best cheeses and breads in the world, and yet somehow have not made a “fancier” grilled cheese since living here. While the cheese possibilities are nearly endless, I settled on brie (old and unpasteurized so it has lots of flavour) because it melts so nicely, and it’s just one of my all time favourites. I also added thin apple slices and dried cranberries for a little sweetness… And it was a DELIGHT! So simple, and yet probably one of the best savoury things I’ve made in a while. I see a lot more of these in my future.

INGREDIENTS
makes 1 sandwich

2 slices pain de mie (homemade sandwich bread)
2 teaspoons mayonnaise
several slices brie
a few dried cranberries
1/4 apple, thinly sliced
2 teaspoons butter, softened

DIRECTIONS

Spread the mayo onto both slices of bread (this might seem like a weird ingredient for a cheese sandwich, but trust me!), and layer on the cheese and cranberries, followed by the apple slices.

Butter the outside of both slices of bread, and fry in a non-stick pan over medium heat until golden brown (flip just once).

SO GOOD! I might have eaten two…
