Lemon Ice Cream

Main - Lemon Ice Cream

I made this ice cream a couple of weeks back, and it’s definitely my favourite one yet! Smooth and light, with a great lemony flavour. Here’s my recipe:


1 cup whipping cream
1/3 cup sugar
1 tablespoon lemon extract
zest of 1 lemon
1 pint lemon greek yogurt
1/4 cup lemon curd


With an electric mixer on medium speed, whip together the cream, sugar, and lemon extract until stiff peaks form.

Gently fold in the zest, yogurt, and curd.

3 - Fold in Yogurt

Refrigerate the mixture until cold, at least 2 hours. Add to ice cream maker, and churn for 20 minutes. Freeze for an hour more before serving.
