3/4 cup unsalted butter, cut into pieces
1/2 cup + 1/3 cup + 1/4 cup sugar
1 ½ cups flour
8 oz cream cheese (1 block)
1 egg, room temperature
1/2 teaspoon vanilla
1 teaspoon cinnamon
3 fresh pears, cut in half, seeds removed, and thinly sliced
1/4 cup sliced almonds
4 oz bitter-sweet chocolate
1 tablespoon vegetable oil
Preheat oven to 425F.
In a food processor, combine butter, 1/2 cup of sugar, and flour until a crumbly dough just comes together.
Press mixture into a 10″ tart pan. Set aside.
Beat cream cheese and 1/3 cup of sugar with electric mixer on medium until well combined. Add egg and vanilla and mix until combined. Spread mixture over pastry in tart pan.
Fan out sliced pears, and lay on top of cream cheese mixture. Sprinkle sliced almonds on top. Combine cinnamon and 1/4 cup sugar; sprinkle over top.
Bake at 425 for 10 minutes. Then reduce temperature to 375 and bake for an additional 20 to 25 minutes, or until center is set. Allow to cool completely. Remove rim of torte pan. Chill in refrigerator.
Melt the chocolate in the microwave (carefully! 50% power, and 30 second intervals), and then stir in the oil. Transfer to a squeezy bottle, and drizzle over the tortes.
