YOU’LL NEED

12 lemons, well washed and dried
1 1/2 litres vodka
2 1/2 cups sugar
3 1/2 cups water
16 150-200mL sterilized bottles, with corks / covers

DIRECTIONS

Zest 10 of the lemons, and cut the peel from the remaining 2 in long strips (be sure to remove the pith). Place the zest and peel into a large bowl, and add the vodka. Cover with plastic wrap and set aside for 4 days.

Remove the large pieces of peel from the lemon-vodka mixture, and place one or two strips in each bottle. Strain the lemon-vodka into a large bowl to remove the zest.

Add the sugar and water to a pot, and cook on medium heat until the sugar is completely dissolved and the mixture just begins to boil. Add the sugar-water to the lemon-vodka, and pour into the bottles. Cork / cover, and you’re done!
