Spicy Gingerbread Pretzel Sticks

Yield: 6 to 8 dozen sticks

Spicy Gingerbread Pretzel Sticks


  • 2 cups flour
  • 1 tablespoon cinnamon
  • 2 teaspoons ginger
  • ½ teaspoon salt
  • ½ teaspoon cloves
  • ½ teaspoon allspice
  • ½ teaspoon cayenne pepper
  • ¹/3 cup unsalted butter, melted
  • ¹/3 cup brown sugar
  • ¹/3 cup molasses
  • ¼ cup brewed coffee
  • ¼ cup white sugar
  • sanding sugar


  • Preheat oven to 350F. Combine flour, cinnamon, ginger, salt, cloves, allspice, and cayenne pepper in a bowl, and set aside.
  • With an electric mixer, beat butter, brown sugar, and molasses on medium until well combined. Alternate adding the dry ingredients and coffee, mixing until just combined and the dough is formed.
  • Divide the dough into three pieces. On parchment, roll each piece into a rectangle (as best as possible). You can make the rectangle more uniform by folding the parchment / dough back over itself and smoothing it out.
  • Sprinkle the rectangle with white sugar, and then with a sanding sugar. Gently press the sugars into the dough.
  • Slide the dough + parchment directly onto a cookie sheet, and bake for 12 minutes. Remove from oven, and quickly cut into ¼"-½" strips using a pizza cutter. Allow them to cool slightly (a minute or two), and separate slightly. Reduce the oven temperature to 200F, and bake for 10 minutes more, until crispy.
