Nut Butter Cookies

Yield: ~4 dozen cookies

Nut Butter Cookies


  • 3/4 cup peanut butter
  • 3/4 cup almond butter
  • 1 cup brown sugar
  • 1 stick (1/2 cup) unsalted butter
  • 1/4 cup egg whites
  • 2 cups flour
  • 1 ¼ teaspoons baking powder


  • Preheat oven to 350F. Combine nut butters, sugar, butter, and egg whites in bowl of an electric mixer, and mix on medium-high speed until light and fluffy.
  • In a separate bowl, mix together the flour and baking powder. Add the flour mixture to the wet ingredients, and stir with a wooden spoon until just combined.
  • Scoop out the batter, 1 tablespoon at a time, onto a parchment-lined baking sheet. Flatten with a fork. Bake for ~15 minutes, until lightly golden.
