Gummy Candy

Yield: ~ 3 cups of candy

Gummy Candy


  • 1/2 cup lemon juice (or other flavour juice)
  • 1 cup sugar + 1 tablespoon sugar
  • 1 teaspoon lemon extract (or other extract)
  • 4 packets gelatin
  • 1/2 cup boiling water
  • yellow food colouring (optional)
  • 1/2 cup cornstarch


  • Grease a loaf pan (4″x8″) and set aside. Add the lemon juice, 1 cup sugar, and extract to a small sauce pan over medium heat, and bring just to a boil.
  • Meanwhile, in a small bowl, combine the gelatin and boiling water, and stir until the gelatin dissolves. Add the juice mixture to the gelatin mixture, and stir in the food colouring. Pour through a strainer into the prepared pan, and chill until set (overnight is best).
  • Combine the tablespoon of sugar and cornstarch. Once the candy is set, cut into 4 pieces while in the pan, which should make it easier to get the candy out of the pan (I found using an offset spatula to be helpful). Cut into small cubes, and drop into a the bowl of cornstarch. Place the candies on wax paper, and let them sit for two days.
