Vanilla Cupcakes

Yield: ~18 cupcakes

Vanilla Cupcakes


  • 235 g flour
  • 2 ½ teaspoons baking powder
  • 1/2 teaspoon salt
  • 125 g unsalted butter, room temperature
  • 250 g sugar
  • 3 eggs, room temperature
  • 1 tablespoon vanilla
  • 200 mL milk, room temperature
  • 1 teaspoon lemon juice


  • Prepare muffin tins with liners, and preheat your oven to 180C (350F). Combine the flour, baking powder, and salt in a small bowl, and set aside.
  • Add the butter and sugar to the bowl of an electric mixer, and mix on medium speed for a minute or two. Add the eggs, one at a time, and beat on high speed until light and fluffy. Add the vanilla slowly while mixing, and beat for another minute or two.
  • Mix the milk and lemon juice together. Alternate adding the dry ingredients and the milk to the butter-egg mixture, mixing only on low speed. Add the batter to the prepared tins, and bake for 15 to 18 minutes, until golden brown and done to the touch. Allow the cupcakes to cool completely on a cooling rack before frosting.
