Lemon + Blueberry Muffins

Yield: 3 dozen muffins

Ingredients

  • For the batter...
  • 1 ½ cups flour
  • 1 ½ cups cake flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 stick (½ cup) unsalted butter, room temperature
  • 1 ½ cups sugar
  • ¼ cup olive oil
  • ½ cup apple sauce
  • 4 eggs, room temperature
  • 1 teaspoon lemon extract
  • juice of 1 lemon
  • zest of 1 lemon
  • 1 ¼ cup buttermilk
  • 3 cups blueberries
  • For the crumble...
  • ½ stick (¼ cup) unsalted butter, room temperature
  • ½ cup flour
  • ½ cup brown sugar

Instructions

  • Preheat oven to 350F. Combine flours, baking powder, and salt and set aside.
  • In the bowl of electric mixer, beat butter, sugar, and oil on medium speed until light and fluffy. Add eggs one at a time. Beat for 5 minutes or so. Add lemon extract, juice, and zest, and mix through. Stir  in blueberries by hand.
  • In a separate bowl, mix together crumble ingredients. Divide muffin batter into tins, and sprinkle crumble on top. Bake for ~20 minutes, until toothpick inserted into centre comes out clean.
