Blueberry Muffins

Yield: ~30 muffins


  • 1 stick (½ cup) unsalted butter, room temperature
  • 1 cup sugar
  • 1 ½ cups flour
  • 1 cup cake flour
  • 1 ½ teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup apple sauce
  • 4 eggs, room temperature
  • ½ teaspoon vanilla
  • 1 cup buttermilk, room temperature
  • 4 cups fresh blueberries


  • Preheat oven to 350F. In the bowl of an electric mixer, beat the butter and sugar on medium speed until light and fluffy.
  • Meanwhile, in a separate bowl, mix together the flours, baking powder, baking soda, and salt.
  • Add the apple sauce to the wet ingredients. Once combined, beat in the eggs one at a time, followed by the vanilla.
  • With the mixer on low, alternate adding the dry ingredients and buttermilk in 2 batches.
  • Fold in the blueberries by hand. Bake in paper muffin cups for 15-18 minutes until golden brown.
