Healthy(ish) Banana Breakfast Muffins

I’m not a breakfast person. And I think it’s because I’m not a morning person. I generally sleep until the very last minute, which is inevitably a few minutes too long. And I hate being late. So my mornings are always rushed, and breakfast gets skipped. This is why I need something really easy that I can just grab on my way out the door and eat on the go. So here’s my take on somewhat healthy banana breakfast muffins…

HEALTHY(ish) BANANA BREAKFAST MUFFINS
Makes ~18 muffins.

¾ cup all-purpose flour
¾ cup whole wheat flour
1 cup oatmeal
2 teaspoons baking powder
1 teaspoon baking soda
½ teaspoon salt
¼ cup sugar
¼ cup dark brown sugar
¹/3 cup olive oil
¹/3 cup apple sauce
1 large egg
1 teaspoon vanilla
1 cup (approximately 2) mashed bananas – the older and browner, the better!
²/3 cup milk
½ cup crushed pecans

STEP 1 | Preheat oven to 350F. Combine flours, oatmeal, baking powder and soda, and salt. Set aside.

STEP 2 | In bowl of electric mixer, combine sugars, olive oil, and apple sauce. Mix on medium-low until well combined. Add egg, and continue mixing for several minutes. Add vanilla and mashed bananas and mix until combined.

Step 2

STEP 3 | Alternate adding the dry ingredients and milk to the wet ingredients. Mix only on low and until just combined. Fold in the pecans by hand.

Step 3

STEP 4 | Divide batter into lined muffin cups. Bake for ~17-20 minutes, or until toothpick comes out clean and tops are golden brown. Cool on a wire rack.
