There’s something very summery about fresh fruit pizza. Satisfying and sweet, without being too heavy. I can almost convince myself this is a healthy dessert – I mean, think of the fruity goodness! The recipe I used is a modified version of this recipe.
1 ½ sticks (¾ cup) unsalted butter, room temperature
1 cup + 2 tablespoons sugar
2 eggs, room temperature
2 ¾ flour
1 ½ teaspoons cream of tartar
¾ teaspoon baking soda
¼ teaspoon salt
and for the topping…
8 oz (1 package) cream cheese
½ cup sour cream
¾ cup sugar
1 tablespoon vanilla extract
assorted fruit (I used strawberries, kiwi, raspberries, blackberries, blueberries)
Preheat oven to 350F. In electric mixer, combine butter and sugar. Add eggs, one at a time, and continue beating until light and fluffy.
Meanwhile, combine flour, cream of tartar, baking soda and salt in a separate bowl. Add dry ingredients to the wet ingredients and mix on low speed until just combined. Press dough into parchment-lined pan (I used a cookie sheet) with floured hands.
Bake for 10 to 12 minutes until golden brown. Let cool on wire rack.
For the “pizza sauce”, combine the cream cheese and sour cream in bowl of electric mixer and beat on medium speed. When smooth, mix in sugar and vanilla. Spread the sauce over the crust, and top with fresh fruit.
