Chocolate Amaretto Cupcakes

In my opinion, there’s nothing better than a good cupcake. Pretty, delicious, and single-serving-sized. No messy cake cutting required.

I made these chocolate amaretto cupcakes a couple of days ago. They are really simple to make, and the amaretto adds something extra to an otherwise ordinary chocolate cupcake. Here’s my recipe:

INGREDIENTS

2 cups flour
¾ cups cocoa powder, sifted
1 ½ cups sugar
2 teaspoons baking soda
¾ teaspoon baking powder
2 large eggs, room temperature
¼ cup vegetable oil
1 teaspoon vanilla extract
1 cup milk, room temperature
½ cup amaretto
And for the icing…
8 oz cream cheese
1 stick (½ cup) unsalted butter, room temperature
1 teaspoon vanilla extract
~4 cups icing sugar

1 - Ingredients

DIRECTIONS

Preheat oven to 350F. Combine all dry ingredients (flour, cocoa, sugar, soda, powder) in a medium bowl, and whisk together.

2 - Dry Ingredients

Add all wet ingredients (eggs, oil, vanilla, milk, amaretto) to the dry ingredients and mix on low until combined.

Bake for 15 to 20 minutes, until toothpick inserted into center comes out clean. Cool on wire rack.

For the icing, beat cream cheese and butter until light and fluffy. Beat in vanilla. Add icing sugar until desired consistency is reached.

Pipe (or spread) the icing onto the cooled cupcakes.
