Aunt Pat’s Lemon Squares

Main - Lemon Squares

My Aunt Pat has been making these squares for as long as I can remember, and they’re epic. I recently had a craving and wanted to make them myself, and she was happy to give me the recipe :)


2 cups flour
2 cups coconut
3/4 cup sugar
1 teaspoon baking powder
1 cup melted butter
3 cups lemon filling (I used this homemade lemon curd)


Preheat oven to 350F. Butter a 9″x13″ pan, and line with parchment paper.

Stir together the flour, coconut, sugar, and baking powder in a large bowl. Add the melted butter and combine with a pastry blender.

2 - Add Butter

Press half of the mixture into the bottom of the prepared pan. Pour the lemon filling / curd on top.

3 - Add Lemon Curd

Sprinkle the remain half of the crumble on top.

4 - Sprinkle Topping

Bake for 30 minutes, until golden. Allow to cool completely before cutting into squares.

Enjoy! Also, delicious served with lemon ice cream :)

    These are really awesome – I made them once using only 1/2 cup butter and 1/2 cup sugar – may have added a bit of cream cheeses too.
    They were almost as delicious as the original recipe and definitely less fat – important for your dad and mom!
    BTW, your lemon curd is definitely more delicious than regular pie filling.
